Mackerel & parsley rainbow salad

This salad is so super speedy to make, tastes amazing and is ultra good for you. By grating the veggies the salad becomes extra juicy and the bright colours can’t help but make you feel happy! The variety of colours ensure maximum nutrient potential and a good dose of phytonutrients that can act as antioxidant and anti-inflammatory agents within the body. Rich in fibre and omega 3 fatty acids this salad will have you glowing from the inside out!

Serves 2


  • 2 carrots
  • 1 large beetroot
  • 1 red onion
  • 2 corguettes
  • a large handful of flat leaf parsley
  • 1 lemon
  • 2 tablespoons of good quality extra virgin olive oil
  • 1 large tin of mackerel
  • salt and pepper to taste (optional)


  1. With a course grater (or food processor) firstly grate the red onion, place in a large bowl and cover with the juice of the lemon
  2. Grate the carrots, beetroot & corguettes on the same corse grater and add to the bowl
  3. Chop the parsley and add to salad with a couple of spoonfuls of olive oil and salt and pepper to taste
  4. Serve with mackerel and enjoy
